The Art of Agave
Unlike many other distilled spirits, the taste of tequila is heavily influenced by the raw ingredient, agave, and the unique growing conditions of the land from which it is farmed.
While it may look somewhat alien, especially when grown in the Mars-like terrain of Los Altos, agave has been cultivated for hundreds of years, dating back to prehispanic times. It must reach full maturity (around 6 years) before it can be harvested.
Once harvested, the agave heart or piña is carefully baked so that the juice can be extracted and fermented with yeast to create tequila.
León Y Sol is 100% agave tequila, which means nothing else is added during this painstaking process.
Tequila Terroir:
A Sense of Somewhereness
Just like a good burgundy wine is characterized by the cooler climate of Northern France, tequila exhibits the same sense of place depending on the region from whence it came.
Ours is crafted from agave grown in Los Altos de Jalisco, a region known for cultivating some of the world’s most premium tequila.
This is because Los Altos agaves produce a naturally sweeter, smoother, and more vibrant tequila, with more herbaceous and fruity notes than those grown in El Valle (the ancestral home of Tequila).
The Dark Side of the Sun
León Y Sol Tequila is born of desert blues and hues, from the azul Mexico sky to the storms of agave and the rust-red soils of the highlands.
Here, agave plants grow deep roots in search of water, absorbing more minerals along the way for a smoother finished spirit.
Meanwhile, cooler nights create ‘stress’ on the plant which leads to a natural boost in sugar production. The result is a perfectly sweet and balanced additive-free tequila.
